TACO TIME

Tonight I decided to try and make my own shrimp tacos!! I've seen recipes before, so this was just my own take on the taco, with a little added avocado cream dressing.

Taco:
Yves veggie shrimp
1 can sweet corn, drained
1 can black beans, drained
handful of sliced tomatoes (I used a tomato medley)
feta cheese
lettuce
flour tortillas

Avocado cream dressing:
1 package of Wholly Guacamole mix with pico de gallo
1/3-1/2 c. sour cream (depending on how creamy you want it)
1/4 c. milk
1/4 c. mayonnaise
1 tbsp. lemon juice
a few dashes Sriracha hot sauce

This recipe is extremely quick and easy. All you need to do is heat the veggie shrimp with a little bit of olive oil at medium heat for about 5 minutes. At the same time, you can prepare the tortillas by crisping them in a skillet at medium heat. This will take about a minute; just make sure each side is lightly browned.

All of the add-ins- lettuce, feta, corn, black beans and tomatoes- can just be set out in small bowls so everyone can create their own taco!

For the cream sauce, all ingredients are added to a medium-sized bowl and mixed completely.
