We never follow a recipe when we make this; we just kind of wing it. All we added to our respective shrimp were a few sliced mushrooms, sun-dried tomatoes, garlic, butter, olive oil and a little bit of white wine. We sautéed them for a few minutes, added them to some spinach fettuccini and topped it off with cheese shavings. Dinner was served!! Simple, delicious and, in my case, vegetarian!

SAY IT ISN'T SO!
Tonight, my mom and I decided to make shrimp scampi, but, being a vegetarian, I had to make some modifications. Instead of shrimp, I used Yves brand veggie shrimp. They look very similar to real shrimp and taste just as good...at least to me! My mom stuck to the traditional shrimp that come from the sea!
